Leafy. Commonly used in Chinese cuisine. A transliteration of the Cantonese name.
You guessed it - it's Choy Sum, a literal translation of 'heart of the vegetable' (because no one wants to eat the brain of the vegetable) and also known as Chinese Flowering Cabbage (not to be confused with the fictional Chinese Stem Cabbage).
While it is similar to kailan, it is not, nor will it ever be, however, kailan. To cook, you can lightly boil, steam, stir-fry, combine with other greens or use in soups. Take your selection - we really don't mind how you cook it.
